This easy recipe for ‘lasagne soup’ creates a comforting and ‘cosy’ dish that’s perfect for cold autumnal evenings – and it’s so easy to do as you only need one pan

The cold weather is firmly upon us, and it’s time to say goodbye to salads and hello to stews, soups, and roast dinners. Autumn brings with it a need for hearty and comforting dishes that warm the bones, but no one wants to be slaving over a hot stove for hours on end when they get home from work.
With this easy recipe, however, you won’t need to spend more time in the kitchen than absolutely necessary. Shared by a woman named Chloe on TikTok, the “gorgeous” autumnal dish puts a unique spin on an Italian classic. Forget all the faff of cooking all the separate parts of a lasagne and assembling them for the oven – instead, whack all the ingredients in one pot to make this cosy lasagne soup. What’s more, if you live alone or want to meal-prep for the week, you can cook this dish once and then freeze whatever you don’t use to be warmed up another day.
Chloe began her recipe by heating olive oil in her pan before adding a diced white onion and two teaspoons of garlic, which she sautéed until the onion was soft. She then added 500g of mince along with some salt, pepper, one teaspoon of oregano, and one teaspoon of basil.
Once the mince was fully cooked through, she added two tablespoons of tomato puree and one tin of chopped tomatoes. She then mixed one beef stock cube and one vegetable stock cube together into 500ml of boiled water, which she added to her pot.
Next were the lasagne sheets, which Chloe broke up into small pieces in her hands and dumped into the pan. She gave the mixture a stir, put the lid on, and left it to cook for “approximately 10 minutes”.
Finally, she poured in 100ml of double cream, “a handful” of mozzarella and parmesan, and some fresh basil to top it all off. She then gave it a final mix before serving it with more fresh basil. Chloe described the dish as “delicious” and “spectacular”, and said it was one of her favourite “cosy” dishes.
Some commenters pointed out that the end result did look more like a regular pasta dish than a soup, as there didn’t seem to be much liquid and it could be served on a plate without spilling everywhere. However, Chloe insisted that her other attempts have often come out “more runny” than the one she made in the video, and she usually serves it in a bowl.
She added in a comment: “You can leave this for longer than 10 mins if you fancy and top with ricotta if you’re feeling extra. And if you’d like it more soupy, add some more water to your stock.”
Other commenters were less critical, with many saying they couldn’t wait to try it out for themselves. One person said: “My son’s just had jaw surgery and is on a no-chew diet. This will be perfect! Thank you.”
Another added: “Why do people care so much about whether it’s soup? Looks like a gorgeous scran to me that’s all that matters.” While a third stated: “I’m making this right now for dinner, it smells incredible!”
