If you have leftovers in your fridge from Christmas Day, or bags of roast potatoes you didn’t get round to using, make this viral festive treat that takes minutes in an air fryer
It’s that time of year when we don’t know what day it is, pyjamas and Christmas films are on, there’s a few boxes of chocolates left and some leftovers in the fridge from the big festive dinner.
Most of us are likely to be exhausted – after a busy year, plus all the organising leading up to Christmas, and having so much fun on the big day. So rather than having to think about weekly stresses like food shops or meal preps once again, turning your leftovers into a delicious snack is a perfect and stress-free treat.
Recently, a recipe for a “fully loaded” festive panini went viral after being shared on Instagram page @lifeofcharlouise. Charlotte-Louise Harvey, who boasts over 75,000 followers, shares easy recipes that suit the whole family. Commenting on her festive sandwich, one individual said, this looks insanely good. “I need it right now,” added another. “This is a bit of me,” wrote a third.
The treat won’t take long to prepare plus you can just pop it in the air fryer – and it will leave you totally satisfied.
Charlotte-Louise said: “I absolutely love a festive sandwich or panini when I’m out so I thought I would recreate one at home. Using mainly what I had in the fridge/freezer.”
“The perfect December lunch in my opinion,” the food content creator added.
To prepare the festive delight, you will need a panini – Charlotte recommends getting a four pack from Sainsbury’s for just £1.35. You will also need chilli jam, truffle mayo, bacon medallions, brie, stuffing, pigs in blankets, gravy and roast potatoes.
How to make the viral festive sandwich
- Start by popping your roast potatoes, bacon, stuffing and pigs in blankets in the air fryer – you can use freezer items, fresh, or leftovers
- Cut your panini in half and spread chilli jam and truffle mayo on each half
- Once the fillings are cooked in the air fryer, add them into your panini as well as some brie
- Push down on the top of your bread to secure the fillings, before wrapping in tin foil
- Back to the air fryer – pop your sandwich in for five minutes, or until the brie is melted
- Serve with a pot of gravy and your roast potatoes
