Yorkshire puddings are a simple dish to make from scratch and require just a few simple ingredients – but a chef says one common ingredient is essential for success
Whipping up Yorkshire puddings from scratch is a breeze, requiring only a handful of ingredients that you likely already have in your kitchen.
They’re as straightforward as pancakes, calling for a similar batter and quick preparation. However, like most seemingly simple recipes, the technique is key to nailing the final result.
Rizwan Asad, a food connoisseur, pastry baking specialist, and Founder of Chocolates and Chai, has divulged his Yorkshire pudding recipe, along with a crucial tip he insists can make or break your homemade treats.
“This is a fantastic recipe that I love making – it’s easy and delicious,” Rizwan enthused. He pointed out that the recipe is suitable for both oven and air fryer cooking.
When it comes to the most vital ingredient, Rizwan recommends using whole milk above all else, and there’s a sound reason behind this, reports the Express.
The culinary expert explained: “The key ingredient to great results lies in a well-rested batter and ensuring the oil is properly heated before pouring. Whole milk contributes to a richer texture, while extra virgin olive oil provides a crispier finish than other fats.
“Utilising the air fryer over a traditional oven allows for better control of the cooking process. The rapid air circulation aids the puddings in rising evenly, achieving that signature crispness without the risk of deflation.”
Rizwan highlighted that due to the consistent heat, there’s “no need to rotate trays or worry about uneven baking”.

Ingredients
- 50g plain flour
- One small egg
- 150ml whole milk
- Salt and pepper
Method
- Firstly, to prepare Rizwan’s Yorkshire puddings, preheat the air fryer to 200C (400F).
- Next, mix 50g of plain (all-purpose) flour with a pinch of salt and pepper. Gradually incorporate one small egg, followed by 150ml of whole milk, adding it bit by bit.
- Ensure the batter is well beaten until bubbles appear on the surface – this contributes to the characteristic light texture.
- Heat a tablespoon of extra virgin olive oil in the pudding tins by placing them in the air fryer for about five minutes until they start to smoke.
- Once heated, fill the tin halfway with the batter and bake for 15 minutes at 200C (400F), without opening the fryer during the cooking process. If you don’t have an air fryer, cook in an oven at 220C for at least 20 minutes.
