Whip up Jamie Oliver’s comforting chicken stew
Ingredients:
- Four chicken legs or thighs
- Four rashers of streaky bacon
- Four cloves of garlic
- Two tins (400g) of plum tomatoes
- Two tins (400g) of cannellini beans
- 400ml of red wine
- One tablespoon of fennel seeds
- Thyme
Kitchen essentials:
- 25cm x 35cm roasting tray
Instructions:
1. Preheat your oven to 190C.
2. Get your ingredients ready. Chop the bacon into 2cm chunks, then peel and slice the garlic.
3. Heat your oven roasting tray on the stove over medium-low heat with a tablespoon of olive oil.
4. Toss in the garlic, onion, and fennel seeds with some fresh thyme or thyme seasoning into the tray.
5. Cook until they turn lightly golden, then pour in the red wine and plum tomatoes.
6. Drain the beans and add them in, seasoning with salt and pepper.
7. Give the stew mixture a good stir and bring it to a boil.
8. Season the chicken legs and place them atop the stew, skin side up.
9. Pop the dish in the oven and let it roast for a full hour. Remember to give the stew a good stir and baste the chicken halfway through.
10. When it’s done, the chicken should be thoroughly cooked and fall effortlessly off the bone. Jamie Oliver assures that the stew will appear “thick and delicious” by the time it’s finished.
