Make Mary Berry’s creamy bacon and parmesan pasta
Ingredients (serves four):
- 350g of dried pasta
- 300ml of double cream
- 50g of parmesan cheese
- Four thick bacon rashers
- One tablespoon of olive oil
- Squeeze of lemon juice

Kick off by tossing your pasta into a bubbling pot of salted water, simmering away as per the packet’s word.
Flick on your hob and heat the oil in a pan, then throw in the streaky strips. Crank up the heat for a full five minutes until your bacon is crisping up nicely.
Let the cream bubble up before dropping the temperature, allowing it to simmer softly for a minute. Pull the pan from the heat and blend in the cheese till it’s velvety smooth. Give the lemon juice a good squeeze in to slice through the creamy density.
Season thoughtfully with pepper, but tread lightly with the salt – the bacon might already pack a punch.
