Add just two ingredients to winter soup for 75g protein boost

A foodie has shared a simple way to make your homemade soups even healthier as the weather gets colder – and it’s surprisingly easy to do by just adding two simple ingredients

As the weather gets colder, many of us are turning to comforting soups to keep us cosy. But did you know there’s a simple way to make your homemade soups even healthier?

A TikTok user known as @ketorecipes has shared a clever trick for adding a whopping 75g of protein to your soups, and it’s surprisingly easy to do. Not only is this soup packed with health benefits but, according to the creator, it’s also incredibly tasty and has a wonderfully creamy texture. If you’re a fan of butternut squash, this recipe is definitely one to try.

To prepare the soup, he starts by halving a squash, scooping out the insides and scoring it diagonally with a knife. He then places it in an oven-safe pan along with some chopped red onion and bell peppers.

Before roasting, he drizzles olive oil over the top, seasons with a little salt and his preferred spices, and adds a bulb of garlic to the pan. The dish is then roasted in the oven at 210C for around 45 to 50 minutes.

He explains: “When it’s done, blend it all together with the two undisputed protein superstars. I’m of course talking about bone broth and cottage cheese.”

In the video’s caption, he reveals that he uses approximately 500ml of bone broth and three-quarters of a tub of cottage cheese to finish off the soup. For an extra touch, you can garnish the soup with a splash of cream or some freshly chopped herbs.

This simple method for boosting the protein content of the soup has captured widespread interest, with many individuals adding their own unique twists to the dish.

One user said: “I made it tonight, but swapped the squash for sweet potatoes.”

Another commented: “Cottage cheese? I have to try it now. Great idea!”.
