If you’re a fan of pasta, then you’ll love this simple and healthy pasta sauce recipe that is perfect for a midweek dinner. It is also ready in just half an hour
Pasta makes a brilliant go-to meal for busy weeknight dinners, but whipping up a sauce from scratch can often prove quite lengthy. Consequently, it’s much simpler to grab a ready-made sauce whilst doing the weekly shop.
Nevertheless, these tend to be far less nutritious than home cooking. Bearing this in mind, culinary experts Henry Firth and Ian Theasby from BOSH! have revealed a straightforward and wholesome pasta sauce recipe that’s ready in merely half an hour.
Sharing a clip on their Instagram account, the chefs penned: “This may just be our new favourite weeknight pasta. It’s got sweet, smoky spring onions, silky cream cheese, loads of garlic and a zing of lemon.
“It’s fresh, punchy and ready in under 30 minutes. Save this for when you want something simple, quick and seriously delicious x,” reports the Express.
Their followers were quick to respond, with one penning: “Ooh this sounds so simple and delicious.”
Whilst another contributed: “Sounds so yummy.”
And a third remarked: “The most delicious looking pasta.”
The recipe revealed by the BOSH! duo is entirely plant-based, though if you’re not vegan then you can swap the vegan cream cheese for a dairy alternative.
Ingredients (Serves two):
- 250g dried pasta (the chefs recommend using spaghetti, tagliatelle, linguine, or bucatini)
- One and a half bunches of spring onions
- Four to five garlic cloves
- Three tablespoons of good-quality olive oil
- Zest and juice of one lemon
- Three to four tablespoons of vegan cream cheese
- A handful of sliced fresh chives
- Sea salt and cracked black pepper, to taste
Method:
Begin by bringing a large pot of salted water to the boil.
Cook pasta until al dente, setting aside a cup of pasta water.
Meanwhile, warm a tablespoon of oil in a large pan and add the spring onions.
Char until blistered and tender, which should typically take about four to five minutes.
Then remove from the heat and finely slice. In the same pan, lightly sauté the garlic in a dash of oil until it turns golden, then toss in the spring onions.
Next, add the pasta, a scoop of pasta water, cream cheese, lemon zest & juice. Stir until you achieve a silky texture, adding more pasta water if required.
Once done, season generously and sprinkle with fresh chives. Serve straight away.
