While roast potatoes are pretty easy to prepare, you can impress guests around your Christmas table if the carb treats are flavoured beautifully and extra crispy

When it comes to a Christmas dinner, everyone has their favourite parts – and crispy roast potatoes always hit the spot.

Despite being one of the easiest things to cook, potatoes can sometimes be a bit bland. So, if you’re looking to wow your guests, a tasty recipe could be just what you need to perfect your roasties this festive season.

Food enthusiasts have been salivating over a viral recipe by chef Sam Seats, which garnered over 18 million views. The internet sensation, who boasts 9.9 million TikTok followers and 2.81 million YouTube subscribers, claims his “mighty roast potatoes” will “help you make the best tasting Christmas meal you’ve ever had”.

“This is THE perfect potato for any roast or Christmas dinner, or simply to go alongside a bowl of rich gravy,” he added. Viewers couldn’t help but comment, with one saying: “Oh my God, I’d actually devour them.”

Another added: “Wow, making these tonight,” The great news is that it’s inexpensive to make and serves between six and eight people.

To whip up these treats, you’ll need 2kg of king Edward potatoes peeled and cut into chunks, a few peeled and crushed garlic cloves, 500g of goose, duck, or beef fat, a few sprigs of rosemary, the zest of one lemon, and a generous sprinkling of sea salt.

Follow Sam’s easy method to create these mouth-watering potatoes at home.

Method:

  • Start by placing the potatoes in a pot with a pinch of salt and garlic cloves – you can also optionally add some rosemary springs. Then, cover them with water and bring to boil
  • Cook for 10 minutes until the potatoes are fork tender – but not falling apart
  • Preheat your oven to 200C/390F fan
  • After boiling, drain the potatoes and let them steam dry in the colander for a few minutes
  • Return them to the dry pot, cover with a lid and shake to lightly ‘fluff’ them – this is the secret to achieving crispy edge
  • Place the goose fat into two baking trays as well as the potatoes and place them in the oven
  • Preheat the oil for 15 minutes, remove the tray from the oven and carefully add in
  • Coat each potato in the goose fat then place them back in the oven
  • Now, you should cook the potatoes for 60-75 minutes in the oven, turning every 20 minutes or so to coat them evenly in the oil.

Sam says while cooking, prepare the rosemary salt by blending together, or finely chopping, the rosemary, lemon zest and salt.

He added: “Once the potatoes have cooked and are a golden brown colour all over, remove them from the oven and lift out of the tray with a slotted spoon. Toss the potatoes in a bowl with a sprinkling of the rosemary salt and some extra finely chopped rosemary.”
