Eggs are among the most nutritious foods on the planet.

They’re a versatile and affordable source of protein that can be incorporated into various meals and are a great option for a quick, cheap and healthy meal.

We love them scrambled, fried, baked, boiled, thrown into cakes and dropped into ramen.

And culinary expert Emma Laperruque of Food52 has shared her quick and easy two ingredient way of elevating those lovely fried eggs, reports the Mirror US.

Picked up from Melissa Clark’s cookbook Dinner: Changing the Game, Emma explained that the trick is to add olive oil and herbs to the pan, then cook the egg on top “so the two become intertwined, like sweethearts holding hands.”

According to the original recipe, sage is a delicious option, but Emma suggests that “the world is your herb garden… try snipped chives, torn mint or dill, or leaves of sage, oregano, or thyme leaves, even diced scallions.”

An extra bonus is that extra virgin olive oil provides numerous health benefits, including heart health, anti-inflammatory effects, and potential cancer prevention due to its high levels of antioxidants and healthy fat.

Olive oil eggs recipe

Grab a small skillet (it should not be non-stick) and place it over high heat on your hob.

Add the oil, which should be a high-quality olive oil.

When the oil is hot and shimmering, add the herbs and listen for the sizzle. This is a good sign that the oil is at the right temperature.

Turn down the heat to medium-high to prevent the herbs from burning, and let them sizzle for a few seconds until they start to become crispy.

Then, crack the egg into the pan over the frying herbs. Emma pointed out that the egg whites “should make a big fuss and immediately start to turn opaque.”

One vegetable is never sold frozen or canned in UK supermarkets and for a good reason

Keep lettuce fresh for 10 days longer by storing it with 1 item

Continue to fry the eggs; drizzle olive oil over them until the whites are firm and the yolks remain runny.

For those who like their eggs flipped over-easy or over-medium, use a spatula to do so. Lastly, sprinkle with flaky salt and serve with a variety of accompaniments – toast and butter, avocado, tomatoes or bacon are all excellent choices.
