1 large red pepper, cut into strips

4 sausages, skinned, halved and rolled into balls

Method
Preheat the oven to a high temperature.Start by placing the onion, red pepper, and sweet potato in a large roasting tin. Drizzle with olive oil and season well with salt and pepper. Toss everything together so the vegetables are evenly coated.
Roll the sausages into small balls and scatter them in with the vegetables. Roast until the sausages are browned and the vegetables are tender. While the sausages and vegetables cook, toss the mushrooms in a little olive oil. After a while, add the mushrooms and halved tomatoes to the tray and continue roasting. This will allow the mushrooms to soften and the tomatoes to char.
Once the sausages and veggies are cooked, create little dips in the vegetables and crack the eggs into them. Sprinkle the eggs with dried sage, add a pinch of salt and pepper, and return the tray to the oven. The eggs will bake to a perfect consistency – firm whites with slightly runny yolks.
Once cooked, serve the traybake immediately. For extra veggie goodness, you can add spinach nests or enjoy it just as it is.
