With the rise of meal box services and food influencers, it’s never been easier for us to have a go at something new in the kitchen.
There are now dozens of providers like Gousto, HelloFresh and more offering simple meal kits delivered to your door, with handy recipes of dinner and lunch ideas that you may never have tried before. On top of that, social media has given a platform to hundreds, if not thousands, of foodie vloggers who are on hand to suggest recipes for a tasty treat or two.
One such content creator is Eloise Head, the brains behind and face of Fitwaffle. Her channels offer up easy recipes for desserts and one such video has social media in raptures.
As someone who’s always been a bit shy to try something new in the kitchen, her yummy cheesecake hack appealed to me. I’ve always stuck to store-bought desserts less I stretch my expertise beyond the simple Victoria sponge.
But this easy hack to make one pot white chocolate cheesecakes seemed so simple, I had to try it. And to make matters even more intriguing, it needed just six ingredients.
The comments section had nothing but good things to day. One user described it as ‘heaven, just pure lush’ and another said: “one word: wow”.
One pot white chocolate cheesecake recipe
Ingredients
- 2 shortbread fingers
- 10g melted butter
- 115g cream cheese
- 1 tbsp icing sugar
- 30g white chocolate
- 20ml double cream
Method
During her video, Eloise explained the simple steps to making this dessert. She started: “For the base, crush up two shortbread fingers using a bag and a rolling pin or a food processor.
“Then, poor them into a ramekin dish and mix with 10g melted butter. Then press down gently with the back of a spoon.
“For the filling, whisk 155g cream cheese, 1 tbsp icing sugar and 10g white chocolate until smooth and creamy. Scoop it onto the base and smooth it out to the edges.
“For the topping, melt 20g white chocolate and double 20ml cream in the microwave, stirring until smooth. Then pour it over the cheesecake and smooth this out gently.
“Sprinkle over crushed biscuits, and add a chunk of chocolate to finish. Refrigerate for at least an hour and serve cold. Enjoy!”
The verdict
Making this cheesecake recipe really is as easy as Eloise’s TikTok video made it look. However, I’m not sure what size her ramekin dish is – the ingredients were enough for two of the Gu cheesecake dishes (the ones we all hold onto for way too long hoping we can find something to put in them).
But it was definitely as delicious as advertised – I found myself literally digging in with a spoon over and over in the hopes it would never end.
I did have to improvise a little as I couldn’t find any cream cheese in my local Aldi. Instead swapped it for some mascarpone – and this one additional ingredient made things extra creamy.
One thing I think I got wrong was the base. I don’t know if I’d accidentally added too much or not enough butter, but the biscuit base was rock solid.
Once I broke through, it was delicious. But hopes of getting a bit of the topping, filling and base in one spoonful were quickly dashed.
My friends and family also loved it, and I’ll be sure to make it again soon. Perhaps I’ll take the lead from some of the comments that suggested different ways to tweak it, such as a Biscoff base or Kinder chocolate.
Admittedly, mine were a lot messier looking than Eloise’s cheesecakes. Hopefully, that didn’t mean hers were tastier, too…
