Emily English says her pizza salad recipe ‘recreate the classic flavours’ of our beloved takeaway – and it’s only 543 calories
A Friday night pizza may seem like the ideal way to round off the week, but it’s not typically the most nutritious option. That’s why a food expert has revealed her unique ‘pizza salad’ recipe, offering all the taste of our beloved takeaway without the health worries.
Emily English, 29, said her dish is 543 calories and boasts an impressive 48g of protein. She paired the pepperoni-centred meal with a delicious garlic herb dressing, explaining her eagerness to ‘recreate the classic flavours’.
“Pizza salad with garlic herb dressing,” she wrote in a post to her 1.7 million followers. “When I tell you this salad literally tastes like a pizza.
“Exactly the same way you would choose your pizza toppings, free to add in your favourite toppings INTO the salad to recreate the classic flavours. Feel free to freestyle extra toppings you love, olives, tuna, capers, or whatever your go-to pizza order is.”
To kickstart the recipe, Emily advises preheating an oven or air fryer to 200°C fan while dicing aubergine, cherry tomatoes, and red pepper. Toss these ingredients in a bowl with pepperoni, oregano, garlic granules, and a pinch of salt.
When everything’s well-mixed, pop these in an air fryer or baking tray before roasting for 12 to 15 minutes. Your ingredients should be slightly sticky and caramelised when the timer’s up.
Emily continued: “Scatter [some] diced sourdough and a little grating of parmesan over the top, then return to roast for another four to five minutes until the croutons are crisp and golden.
“While that’s roasting, stir together the yoghurt, garlic powder, oregano, vinegar, salt and pepper for the garlic and herb dressing. Add a splash of water if you want a looser consistency.”
Once the dish has cooked, it’s time to add the shredded mozzarella and fresh basil. Emily also recommends adding cooked chicken and artichokes, explaining that the warmth will ‘melt everything together’.
“Serve warm with a generous drizzle of dressing,” she added.
