The Loose Women star, 65, shared her simple but ‘delicious’ air fryer recipe on social media
Ruth Langsford has shared her feta omelette recipe with fans—and it’s partly made in the air fryer. The Loose Women star, 65, said her dish is not only ‘delicious’ but also especially quick to make.
“QUICK BRUNCH!” she said to her 1.1 million followers in a recent post. “Feta omelette with air-fried peppers & tomatoes and a side of avocado. Delicious!”
To begin her recipe, Ruth took a substantial bag of Tesco-branded sliced mixed peppers and placed them in an air fryer tray. She then added a generous spoonful of chopped garlic.
Next, she included a handful of chopped cherry tomatoes before giving everything a good shake.
After spraying what seemed to be a light coating of oil on top, she set the tray in her Ninja air fryer, cooking it for about 10 minutes at 180°C. While waiting, she whisked three egg yolks in a bowl and fried the mixture in a hot pan with butter.
This formed the base of her omelette, which she topped with several cubes of feta and a blend of herbs. Once it was cooked, she folded the omelette in half and plated it next to the air-fried vegetables.
Chopped avocado, often regarded as a ‘superfood,’ was served on the side. “It’s lovely….[Feta] melts inside the omelette, nice salty flavour,” Ruth also wrote.
The TV star’s video quickly racked up numerous comments, with many fans keen to explore the recipe for themselves. “Looks lovely Ruth, quick and simple too.
“However, I’m not too keen on peppers, so I would have to replace them with an alternative,” one person wrote. Meanwhile, another added: “You’re a great cook. Your meals always look lovely.”
Someone else also joked: “Ooh. Looks great. But three eggs? You must be having company,” Ruth replied: “No….all for me!!”
