Sick of dry, tasteless salmon ruining your dinner? Check out this simple recipe that guarantees you’ll have moist and succulent fish in just 12 minutes, all thanks to a secret £1 ingredient
Turns out, we’ve all been cooking salmon wrong this entire time. The healthy fish, which is high in protein and a rich source of omega-3 fatty acids, is a culinary staple in many British households.
It is a versatile ingredient that goes great with a simple plate of baby potatoes and green beans, as part of a teriyaki rice bowl, or shredded into a creamy risotto. Your options are pretty much limitless – but a simple cooking mistake can dry your salmon out.
To keep the fish moist and tender, Joanne Gallagher, co-founder of Inspired Taste and seasoned cook, recommends coating salmon with brown sugar to boost both texture and taste significantly. According to the Express, she said: “This brown sugar-baked salmon is such a delicious and easy dinner. Our easy brown sugar rub is perfect for salmon fillets. It caramelises and turns into a sweet and smoky glaze in the oven.”

How to cook salmon without it drying out
Ingredients
- 4 Salmon fillets
- 1 tbsp Brown sugar
- 1 tsp Olive Oil
- 1 tsp Lemon zest
- 1/2 tsp Smoked paprika
- Pinch of salt
- Half a lemon, quartered
- Olive oil
Method
- Preheat your oven to 200C/ 180C Fan/ Gas Mark 6. Then, line a large baking tray with parchment paper.
- Thoroughly pat down the salmon fillets with kitchen roll, before massaging each one with olive oil and leaving them to one side. In a mixing bowl, combine brown sugar, lemon zest, paprika, and a ‘hint’ of salt.

- Once all mixed together, spread the mixture over the salmon – and work it into the fish with your hands. You can leave the marinated salmon for 10-15 minutes to let the flavour really infuse (but if you’re in a rush, you can skip this step).
- Place the salmon on the baking tray, skin-side down, and cook for around 12-15 minutes, until cooked through. Then, remove the salmon from the oven and enjoy!
Et voila! It really is that easy. PS: If you’d like a citrus tang with your salmon, you can serve the fish with a lemon wedge and squeeze some of the juice over before eating.
