Salmon will have more depth of flavour with recipe that’s ‘so easy to make’

Salmon dishes have emerged as a go-to choice for busy weeknight dinners across countless homes, thanks to their straightforward cooking methods and excellent nutritional benefits.

This one-tray wonder will elevate your culinary experience by effortlessly turning a handful of basic ingredients into a spectacular and tasty feast. The brilliant aspect is that it requires merely 45 minutes from start to finish and caters for four people, satisfying the entire family without delay.

When posting this recipe, Pinch of Yum contributor Lindsay said: “Simple and delicious salmon and potatoes roasted on a sheet pan, and covered in a garlic dill butter sauce! One of my family’s favourite dinners.”

How to make salmon more flavourful

Ingredients

For the salmon

  • 650g salmon filet
  • 3 tbsp Dijon mustard
  • 2 tbsp mayonnaise
  • Red pepper flakes#
  • Dill
  • Lemon wedge, for serving

For the dill potatoes

  • 700g Yukon baby gold potatoes
  • 1 1/2 tbsp olive oil
  • 1 1/2 tsp salt
  • 120ml water
  • 3 tbsp butter, melted
  • 1 garlic clove, grated
  • 1 tbsp freeze-dried dill, or 3 tbsp fresh dill

Method

Preheat your oven to 230C. On a roasting tin, toss the potatoes with oil and a sprinkle of salt, arranging them in a single layer. Add a splash of water straight onto the tin.

Bake for 30 minutes – this technique allows the water to steam the potatoes whilst the heat creates a golden, crispy exterior. Following 30 minutes, push the potatoes towards the sides of the tin.

Position the entire salmon fillet in the centre, skin-side down. Season with half a teaspoon of salt.

In a small dish, blend together the mayonnaise and Dijon mustard, then spread the mixture across the salmon’s surface. Return the tin to the oven and cook for six minutes.

Subsequently, transfer it beneath the grill for two to three minutes, placing it near the heat source so the fish’s top becomes golden.

It’s done when the salmon separates into flakes with ease. Mix the melted butter with grated garlic and chopped dill, then pour it over the hot potatoes.

Complete the dish by sprinkling dill and red pepper flakes on the salmon. Just before you serve, drizzle fresh lemon juice over everything, break the salmon into large pieces and serve it with the roasted potatoes.
