Your roast potatoes are about to get a whole lot tastier with this little-known trick that injects a bit of flavour in the boiling stage before they even go in the oven
Perfecting roast potatoes is a delicate art – but this hack might help.
Everyone seems to have their own recipe for making roast potatoes. We all know they should be crispy on the outside with a delicious fluffy interior, but there seem to be countless tips and tricks out there from people claiming they have the ultimate hack to guarantee perfect spuds every time.
Most of these tips revolve around the type of oil that you use, how you toss your potatoes in the oil once they’ve been boiled, and how long you should roast them. But did you know you could also inject more flavour into your roasties by making one simple change at an earlier stage of the cooking process?
According to a woman on TikTok, you can make “crispy, crunchy oven-roasted potatoes” by following her recipe. She uses small baby potatoes in her video, but you could use full-sized potatoes if you’re preparing the recipe for your next roast dinner. In the clip, she began by lining a baking dish with a thin layer of oil and preheating it in the oven.
She then peeled her potatoes and put them in a pan to boil. Most importantly, the woman boiled her potatoes in chicken broth instead of in water, adding a shot of flavour to her spuds before they even hit the oven.
Once the potatoes were soft but not fully cooked through, she took them out of the broth, shook them until the edges were roughed up, and seasoned with garlic powder, onion powder, salt, black pepper, and rosemary. She then tipped the seasoned spuds into the hot oil in the pan and cooked at 400F (200C or gas mark 6) for 45 minutes to an hour.
The woman also recommended turning the potatoes every 15 to 20 minutes so that they can crisp up on all sides.
Commenters on the post said they were eager to try the recipe for themselves, particularly those in the US who said they had rustled up a batch as a side dish for their Thanksgiving dinner earlier this week (28th November).
One person said: “I would literally employ someone full-time just to make roast potatoes for me,” while another added: “Oh yum! Gotta make these for sure.” And a third wrote: “Wow, these look amazing!”
