Yorkshire puddings hold a special place in the hearts of many across the nation – complementing a roast dinner or serving as the crowning glory of a toad in the hole.
Their comforting appeal is undeniable, but achieving the perfect pudding can be a challenge. To avoid the disappointment of a soft or soggy Yorkshire pudding, mastering the technique is crucial.
Fortunately, a chef from London’s Fallow Restaurant is sharing his expertise to guide you through the recipe.
In a TikTok video, the chef reveals his top recipe for crafting flawless Yorkshire puddings, and it’s surprisingly straightforward. The key lies in following a few simple steps.
The process begins with beating eggs, followed by the addition of salt and half of the milk. Next, flour is incorporated, and the mixture is beaten until it forms a smooth batter.
From here, he adds a splash of vegetbale oil to the tray – for super crispy and fluffy results.
He continued: “Finish it off with the milk, adding it bit by bit, and rest overnight. Then we’re going to take our Yorkshire pudding tray and add a little bit of veg oil. Get it super, super hot.
“Put your Yorkshire pudding mix into a jug, pour it into the mould. Cook it for 10 minutes, turn the heat down and bake them for another 10 to 15 minutes.
“For the last five minutes, turn them upside down just to crisp them at the bottom, and there you have it.”
The video has been viewed over 5,000 times since it was shared, and people were quick to comment too. They had all sorts of questions.
One person said: “Great.” Another also added: “I just throw it all in a blender and they taste and look the same.”
Why should I use oil to make Yorkshire puddings?
A common practice when making Yorkshire puddings is to add beef dripping to the bottom of the tray. Two essential secrets ensure they rise well – allowing the batter to rest before use, and heating the tin and beef dripping to a piping hot temperature before adding the batter.
However, this recipe takes a different approach by using vegetable oil instead of dripping. Many advocates for this method argue that vegetable oil can reach the high temperatures needed to “puff up the batter” effectively.
By adopting this technique and following the chef’s simple steps, you’ll be well on your way to creating perfect, comforting Yorkshire puddings that are sure to delight.
If you opt for this method, it’s recommended to pour two teaspoons of vegetable oil into each section of the Yorkshire pudding tray.
If you only have one tin, you might need to prepare them in batches.
