This chicken fajitas recipe provides the ideal answer for a speedy midweek family meal. It takes just 25 minutes from start to finish and is bursting with nutrients and taste.

Following the guidelines precisely, this dish feeds four people and requires only 15 minutes of preparation time, with a mere 10 minutes of cooking.

How to prepare chicken fajitas

Heat the oven to 200C (180C for fan ovens) or gas mark six, then wrap eight medium tortillas in aluminium foil, as per the Express.

In a large bowl, mix together a heaped tablespoon of smoked paprika, a tablespoon of ground coriander, a pinch of ground cumin, two crushed garlic cloves, four tablespoons of olive oil, the juice from one lime, and four to five drops of Tabasco. Season well with salt and black pepper.

Toss two chicken breasts, one red onion, one red bell pepper, and one finely sliced red chilli (optional) into the bowl. Combine everything thoroughly to ensure all ingredients are properly covered with the marinade.

Heat a griddle pan over high heat until it begins to smoke, then add the seasoned chicken and vegetables to the sizzling pan.

Fry over high heat for approximately five minutes, turning regularly with tongs to create a nicely charred, lightly blackened finish. If your griddle pan isn’t big enough, prepare in separate portions.

To ensure the chicken is thoroughly cooked, break open the thickest piece – there should be no raw or pink meat inside. If needed, continue cooking.

Warm the wrapped tortillas in the oven and serve with the cooked chicken mixture, mixed salad leaves, and add salsa and guacamole if you fancy.
