Ingredients

  • 175g self-raising flour, plus extra for dusting.
  • 12 tsp baking powder.
  • 50g butter, cut into small cubes.
  • Two tbsp caster sugar.
  • 12 tsp vanilla extract.
  • 90ml buttermilk or milk.

Instructions

  1. Preheat the air-fryer to 180C. In a bowl, combine the flour and baking powder with a pinch of salt. Use your fingertips to rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs. Alternatively, you can achieve this by pulsing the mixture in a food processor.
  2. Add the sugar to the flour mixture and stir to combine. In a separate bowl or jug, blend the vanilla with the buttermilk or milk. Gradually mix this liquid into the flour mixture until a soft dough forms.
  3. Lightly flour your work surface and transfer the dough onto it. Mould the dough into a sphere, then gently squash it to about four to five cm in thickness. Use a five cm round cutter to carve out scones.
  4. You might need to initially cut out a few scones, then reshape the leftover dough to carve out more. Pop the scones in the air-fryer basket, lightly brush them with milk, and bake for 14-18 minutes, or until they’ve turned golden brown and risen.
  5. Keep the scones in an airtight container for up to three days. To make them softer, warm them in the microwave for 30 seconds before serving. Relish them with jam and clotted cream, accompanied by a cup of your favourite tea.
