This simple salmon and broccoli pasta recipe is perfect for those who are short on time and want to make a delicious dinner. Here’s how to make it in four easy steps and no stress

Recipes can frequently prove quite a nightmare to tackle, particularly when you’re attempting to whip up supper following a lengthy day at the office.

However, this salmon and broccoli pasta dish is incredibly straightforward to prepare, requiring minimal components and just four steps to complete. The recipe comes from Justine Pattison, amongst Britain’s leading culinary authors, and appears on the BBC Food website.

Labelled as an “easy recipe”, the description states: “A simple and delicious salmon pasta that’s ready in under 15 minutes. This recipe makes two generous servings or three lighter meals. It’s also very easy to double up.”

Ingredients

  • 150g dried pasta, of any kind
  • 150g broccoli, cut into small florets
  • One tablespoon of olive oil
  • Four spring onions, trimmed and sliced or 12 small onions, very finely sliced
  • Two skinless salmon fillets (around 120g each), cut roughly into 3cm chunks
  • Good pinch of dried chilli flakes (optional)
  • 100ml double cream
  • Half a small lemon, finely grated zest only
  • Salt and fresh black pepper

Method

Begin by half-filling a large saucepan with salted water and bring to the boil, reports the Express. Add the pasta and cook for seven to 12 minutes, or following packet directions until just tender, stirring from time to time.

Three minutes before the pasta finishes cooking, add the broccoli to the water and allow it to cook alongside the pasta for three minutes. Meanwhile, heat the oil in a medium non-stick frying pan and gently saute the spring onions, or sliced onion, for one to three minutes, or until they’ve softened.

Don’t forget to give them a good stir now and then. Next, toss in the salmon pieces and chilli, if you’re using it, and cook for about a minute, making sure to turn the salmon three to four times.

Pour in the cream and a ladleful of the pasta cooking water (around 100ml) and season generously with salt and pepper. Bring the pan to a gentle simmer and let the salmon cook for three to four minutes, turning occasionally.

If you find that the sauce is getting a bit too thick, feel free to add an extra splash of water, but not too much. Drain the pasta and broccoli and return them to the pan, then finish off by adding the creamy salmon sauce and lemon zest and mix everything together.
