An online content creator has shared her simple recipe for turning leftover rice into a delicious ice cream – and you most likely already have the other ingredients for it

We’re all conscious of the need to reduce food waste, especially with the cost of living crisis hitting many of us in the UK and winter on its way. It’s no surprise that we’re looking for ways to save money. One method is to not simply bin leftover food, but ensure it’s eaten within a few days or frozen for future use. However, leftovers often get a bad rap as ‘boring’ and not as tasty as when first cooked, making them less appealing.

To combat this, food influencer and content creator Maya, known online as ‘fitgreenmind’, has revealed her clever trick for transforming leftover rice into a delicious yet simple dessert or snack. And chances are you already have the other necessary ingredients ready in your kitchen.

On Instagram, where she boasts over 3.9 million followers, Maya was seen clutching a pot of boiled rice before unveiling her plans to turn it into ice cream.

“Did you know you can turn your leftover rice into ice cream?” she posed at the start of her video, before proceeding to share the straightforward recipe.

She then detailed the process, beginning by putting the leftover rice into a blender. In her video caption, she noted that she used 300 grams of cooked sticky rice, but any cooked rice would do.

Maya then proceeded to incorporate 300ml of milk, opting for a vanilla-flavoured soya milk to impart a subtle vanilla taste to the frozen treat. However, she assured viewers that any milk available at home would work.

She went on to add 70 grams of sugar along with a pinch of salt to the rice before mixing everything thoroughly until achieving a smooth consistency.

Using a separate bowl, she introduced 300ml of ‘vegan whipping cream’, which she noted would be perfect for those wanting their dessert to be vegan or dairy-free. Alternatively, she confirmed that regular whipping cream would work equally well. She whisked this until soft peaks formed in the cream.

“Add the rice mix to the whipped cream and fold it in carefully until beautiful,” Maya instructed whilst gently combining the mixture with a spatula.

She then delicately transferred the blend into a larger container before freezing it overnight. When ready to enjoy the ice cream the following day, Maya suggests allowing it to defrost for several minutes to make serving easier.

“The moment of truth,” she declared whilst scooping the ice cream before sprinkling it with cinnamon.

In the video’s caption, Maya revealed: “It actually works and tastes REALLY GOOD (like rice pudding as ice cream)!”.

Numerous viewers quickly flocked to the comments section to express their opinions, with many left astounded by the straightforward recipe. “I need to try this recipe RIGHT NOW,” one eager viewer wrote.
