Ingredients (serves 1-2)

  • 450g Beef tenderloin – thinly sliced
  • 225g Cremini mushrooms – sliced
  • 250ml Beef stock
  • 2 tbsp Butter
  • 1 tbsp Tomato puree
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Soured cream
  • 1 Small onion – thinly sliced

  • Salt and pepper
  • Chopped fresh parsley – for garnish
  • Egg noodles – cooked according to package instructions

Method

  • Season the meat with salt and pepper then heat the butter in a large pan over medium-high heat. Add the beef and cook for around two minutes on each side, until lovely and brown in colour. Remove the meat from the pan and set aside.
  • In the same pan, saute the onion, mushroom, and garlic for around five-seven minutes. The veggies should have softened and the liquid evaporated. Now, add in the tomato puree, beef stock, and Worcestershire sauce. Stir everything well then bring to the boil.

  • Reduce the heat and add the beef back to the pan. Simmer for around five-10 minutes, or until the meat is cooked through. The sauce should have also thickened at this point.
  • Add in the soured cream then garnish with chopped fresh parsley. You can add more salt and pepper if you desire.
  • Serve over cooked egg noodles. Alternatively, this dish goes great on a bed of rice, mash potatoes, chips, or pasta. Basically, any carb will do!
