When you’re feeling under the weather, sometimes the only thing that will do is a big bowl of soup – and one cooking guru says their “get well soon soup” is the perfect remedy for when you’re feeling a bit rubbish

If you’re feeling a bit ill, this “get well soon soup” could be just the ticket.

The grim winter weather has ushered in a wave of colds and illnesses that have knocked many of us for six – hardly the best start to 2025.

One culinary whizz on social media has the perfect remedy for you this winter: a straightforward soup recipe that takes just an hour to rustle up from scratch.

Even better, the recipe is chock-full of immune-boosting veggies that could help you kick your cold to the kerb in no time, making it the ideal dish to knock together when you’re under the weather. Emily christened her recipe “get well soon soup” and revealed she made it three times in one week when her boyfriend was “super poorly”.

She touted the soup as being high in vitamins C and A, packed with antioxidants, and beneficial for your gut. Ingredients Method Preparing this dish is a doddle.

In her TikTok video, Emily explained she arranges the pepper, tomatoes, carrots, onion, garlic, and butter beans on a baking tray lined with baking paper. She then drizzles the whole tray with olive oil and seasons with the salt, mixed herbs, and chilli flakes.

She then places the tray in her fan oven at 200C (180C for a conventional oven, or gas mark 6) for 35 minutes. Once the veggies are roasted, she combines them with the hummus and balsamic vinegar.

Finally, she blends the mixture with the stock cube and water. In her video’s caption, Emily emphasised the importance of squeezing out the garlic cloves after roasting, as you don’t want to blend the skins into your soup.

She also suggested adjusting the water quantity if you prefer a thinner or thicker soup. The video has received positive feedback, with many viewers eager to try the recipe themselves, praising the final result as “incredible”.

One commenter exclaimed: “This looks amazing! ” while another observed: “Almost looks like hummus you can eat as a dip.”
