As the cold winter weather starts to drag, a hearty, homemade meal can be just the thing to boost spirits – and Jamie Oliver’s one-pan garlic chicken is the perfect remedy.
This delicious, creamy dish is not only a treat for the taste buds, but can be whipped up in just 15 minutes. First featured in his cookbook ‘5 Ingredients Mediterranean’, this simple recipe is ideal for a quick and easy dinner that’s easy on the wallet, with the added bonus of minimal washing up.
Jamie explained: “Inspired by some of the wonderful flavours of Lebanon, this quick dish is perfect for an easy meal.” He also recommends using plump, jarred chickpeas for the best results, saying: “Hunting out nice fat jarred chickpeas is game-changing when it comes to both flavour and texture.”
How to make Jamie Oliver’s garlic chicken one-pot dinner
Ingredients (for two):
- Two skinless chicken breasts (150g each)
- Tin of chickpeas (700g)
- 250g of baby spinach
- Four cloves of garlic
- One heaped teaspoon of sumac
Kitchen essentials:
- Large non-stick frying pan
- Slotted spoon
Method:
Start by adding a tablespoon of olive oil to a frying pan. Peel and slice the garlic lengthwise, then add it to the pan and cook on high heat, stirring frequently.
Slice each chicken breast into three strips and season with salt and pepper. Once the garlic is golden and cooked, remove it from the pan with a slotted spoon and set aside, leaving the garlic-infused oil behind, reports the Express.
Pop the chicken strips into the pan and sizzle for about five minutes until they’re thoroughly cooked and have a golden brown hue. Once done, take the chicken out of the pan and put it aside for a bit.
Next, pour the chickpeas along with their juices from the tin into the pan, add in the spinach, garlic and a tablespoon of red wine vinegar. Let it cook until the spinach wilts and the chickpeas are heated through, then season with salt and pepper.
Add the garlic back into the pan, and give it a good sprinkle of sumac. Your garlic chicken dish, served with creamy chickpeas and spinach, is now ready to be enjoyed.
