The celebrity chef has shared a ‘great cheat recipe’ for the perfect sausage rolls in half an hour and everything is just a little bit better when it’s homemade
Jamie Oliver has just dropped a ‘great cheat recipe’ for making the ultimate sausage rolls in just 30 minutes – and it’s perfect for getting everyone involved in the kitchen.
As we gear up for party season, forget about rushing to Greggs or Iceland because Jamie’s homemade version promises to be even more scrumptious.
His latest take on the classic snack is a celebration of autumn, featuring fresh apples and pork mince wrapped in flaky puff pastry – ideal for those chilly evenings. Fans are already raving about it on YouTube, with one commenting: “Sausage rolls are one of the simplest but most satisfying and delicious things to make.”

Ingredients
- One leek
- One Royal Gala apple
- Four sprigs of fresh thyme
- 500 grams of minced pork
- 1⁄2 teaspoon mustard seeds
- 500 grams of puff pastry
- One large free-range egg
Method
Start by preheating your oven to 200C/400F/gas 6. Then get to work washing, trimming and dicing the leek, coring and dicing the apple, and picking the thyme leaves.
Combine pork, leek, apple, thyme leaves, and mustard seeds in a bowl, season to taste, and then put it aside. Roll out the pastry to a thickness of 1 cm and dimensions roughly 34 cm by 30 cm.
Slice it down the middle lengthways and heap a trail of the mince along the centre of each piece. Moisten the sides with beaten egg, fold them over and press down to seal.
Add another brush of egg and section each piece into 3 cm rolls. Notch the tops and bake for 20 minutes or until they’re golden brown and cooked perfectly.
The chef suggests upsizing some of the rolls and presenting them on a chopping board for guests to divvy up over dinner. He emphasised: “Guys, homemade sausage rolls are beautiful [and] so easy. This is a great cheat recipe.”
