Jamie Oliver shared his ‘outrageous’ pork crackling recipe on his TV show, and people said the dish is ‘mouth-watering’ and ‘my kind of roast’ in the comments

We all have our favourite bits of a roast dinner, whether it’s the roast spuds or the stuffing.

But one thing that unites all pork lovers is the crackling. Battling for that last piece of crispy skin where the fat has melted to perfection and makes your mouth water is standard for a Sunday lunch. Now, you can master incredible pork crackling as Jamie Oliver has shared his “outrageous” tips for getting it just right.

“Follow me and I promise this pork recipe will change your cooking, it’s unbelievable,” he declared while sharing his pork loin secrets. Displaying a large piece of pork loin, Jamie sliced off the crackling skin from the top, explaining “your butcher will do this for you.”

He then scored the crackling using his own “cooking Stanley knife”, because “you want it to be shareable.” The entire piece of skin remains whole, but the score lines create several different strips, ready to be torn at when fully cooked.

Jamie then placed the skin fat side down into a frying pan to sear and render briefly. After it was done browning, he removed it and put the seasoned loin in the same pan to sear all over and develop “that beautiful caramelised flavour.”

He recommends placing the pork skin “straight onto the [oven] bars” above the roasting loin, ensuring heat from both top and bottom creates “the most amazing simple gravy.”

Jamie enthused about the process: “Remember the heat’s coming from the bottom and the top”, and “And then it’s dripping on our pork down below which is creating the most amazing simple gravy. That’s going to really look after your pork, guaranteeing juiciness.”

As he presented the finished dish, complete with crispy crackling, fans were quick to drool over the results in the comments section.
