Nothing beats a generous bowl of cheesy pasta, and this recipe is ideal for creating some comfort food that will keep you cosy on a chilly autumn evening.

Mary Berry’s mushroom and broccoli pasta features a rich, creamy and cheesy sauce that is incredibly straightforward to prepare yourself. In her cookbook ‘Mary’s Foolproof Dinners’, she explained: “The perfect midweek supper dish. It is important to keep the slices of mushroom large; if they are too small, they will get lost among the pasta.”

It takes just 10 minutes to prepare this scrumptious dish and serves six people. This is a brilliant recipe to wow loved ones with as both youngsters and grown-ups will adore it, plus it’s suitable for vegetarians.

How to make Mary Berry’s creamy midweek pasta

Ingredients

  • 350g of pappardelle pasta
  • 200g of broccoli
  • 250g of chestnut mushrooms
  • 250g of portobello mushrooms
  • 250g of shitake mushrooms
  • Three garlic cloves
  • Three egg yolks
  • 200ml of double cream
  • 125g of parmesan cheese
  • Knob of butter
  • Two tbsp of olive oil
  • One large bunch of basil leaves (to serve)

Method

To start, place a large frying pan over a medium heat and melt the butter and oil.Finely grate the garlic and incorporate it into the pan. Chop the mushrooms into large pieces, add to the pan and cook until they start to brown.

Season with salt and pepper then set aside, reports the Express. Add the pasta to a pot of salted boiling water and cook according to the packet instructions. Three minutes before the end of the cooking time, add the broccoli.

Drain the pasta and broccoli, but ensure you reserve two tablespoons of pasta water. Meanwhile, whilst the pasta is cooking, combine the cream, egg yolks and parmesan cheese in a small bowl and whisk together with a fork. Add the pasta, broccoli and pasta water to the large pan with the mushrooms and garlic, then give it a good stir over a low heat.

Next, pour the creamy egg mixture into the pan and give it a good mix until everything is well coated, then season generously with salt and pepper. Finally, chop up the basil and sprinkle it over the pan.

Your delicious creamy pasta is now ready to be served. And voila, just 10 minutes and food’s ready to enjoy.
