Ingredients:
- 150 g coconut flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 3 tbsp caster sugar
- 6 large eggs
- 300 ml buttermilk
- 2 tbsp rapeseed oil
- 2 small bananas
- 2 tbsp agave syrup
- 20 g coconut flakes
Step-by-step instructions:
Using a medium bowl, mix together the coconut flour, baking power, bicarbonate of sugar, sugar and a pinch of salt. Then, add the eggs, buttermilk, and rapeseed oil. Once it has been well combined, it will create a thick mixture.
With a large non-stick frying pan over a medium-low heat, add rapeseed oil. Then, add the mixture until it creates a thick circle. Let it cook for two to three minutes until golden brown. And repeat until the mixture is finished.
