Whether you’re a fan of cheese and beans or prefer tuna on your jacket potato, this quick and easy dinner option is sure to satisfy. While baking jacket potatoes in the oven can yield a wonderfully crispy skin and fluffy interior, it can take hours for them to soften.

Indeed, oven-baking can take around two hours, whereas microwaving only requires a few minutes. Good Food has shared a straightforward recipe for microwave-cooked jacket potatoes, using just a handful of ingredients to achieve the perfect baked potato.

Ingredients (serves two):

  • Two large baking potatoes
  • One teaspoon of olive oil

You’ll also need:

  • Two sheets of kitchen roll
  • One microwave-safe plate

Instructions:

This step allows any steam to escape, preventing the potatoes from exploding and causing a mess in the microwave. Next, place a sheet of kitchen roll on a microwave-safe plate, position the potatoes on top, and cover with another sheet of kitchen roll.

If you desire a slightly crispy skin, simply rub a bit of oil onto the potato just before microwaving, reports the Express. Microwave for four minutes, then flip the hot potatoes over, re-cover with the kitchen roll, and cook for another four minutes before turning again.

Continue cooking in one to two-minute intervals until they feel soft throughout and the skins are slightly crisp and wrinkled.

Remove them from the microwave and allow them to cool slightly before digging in with your topping of choice.
