It all comes down to temperature and timing. To ensure your steak cooks perfectly, let it reach room temperature before it goes into the pan.

You don’t need to leave it out for ages – 30 minutes on the worktop while you’re getting the rest of your dinner ready will bring it to the right temperature, reports the Express US.
When it’s time to cook your steak, season it first with salt and pepper, making sure to rub the seasoning into the meat.
Let it sit for another 15 minutes so the flavours can permeate the meat.
