A sausage roll is definitely a staple for pastry lovers and the perfect make ahead appetiser especially as we head into the party season.

Jamie Oliver has just dropped a ‘great cheat recipe’ for sausage rolls that’ll have you whipping up the flaky, golden brown delights in just 30 minutes – and it’s all homemade.

As we gear up for the party season, forget about dashing to Greggs or Iceland; Jamie’s latest culinary hack is perfect for pastry aficionados looking to impress with minimal fuss. This family-friendly recipe is a cinch, whether you’re a kitchen whizz or a novice who sticks to the basics.

The celebrity chef’s autumnal twist on the classic includes fresh apples and pork mince wrapped in buttery puff pastry, ideal for those chilly evenings. Ingredients

  • One leek
  • One Royal Gala apple
  • Four sprigs of fresh thyme
  • 500 grams of minced pork
  • ½ teaspoon mustard seeds
  • 500 grams of puff pastry
  • One large free-range egg

Method

Start by preheating your oven to 200C/400F/gas 6, then wash, trim and dice the leek, core and chop the apple, and pluck those thyme leaves.

Combine the pork, leek, apple, thyme leaves, and mustard seeds in a bowl, season, and put aside. Flatten out the puff pastry to a thickness of about 1 cm, making sure it measures around 34 cm x 30 cm.

Slice it lengthwise and spoon a line of the mince mixture along the middle of each piece. Moisten the edges with beaten egg, roll them up tightly, and press down to seal it all in.

Give them another brush with egg before chopping them into rolls that are roughly 3 cm wide. Make a few cuts in each roll’s top and bake for approx 20 minutes until they’re golden brown.

The chef suggests upsizing a few of those rolls and serving them on a board to be carved at the table. He cheerily recommends: “Guys, homemade sausage rolls are beautiful [and] so easy. This is a great cheat recipe.”
