New Year’s Day often finds folks feeling worse for wear after the festivities, or simply blue because the jolly season has wrapped up. However, celebrity chef Jamie Oliver shares a “super-easy” egg noodles recipe that’s sure to boost your spirits.

According to Jamie, this drool-worthy dish can be whipped up in less than 20 minutes and is the ultimate comfort food, customisable with whatever you have tucked away in the pantry.

On his website, Jamie advised: “This super-tasty, quick noodle recipe is perfect when you’re feeling a little down in the dumps.”

The magic lies in the vibrant dressing mixed through hot veg and noodles, which you plate with a fried egg drizzled with chilli sauce – a true bowl of comfort.

For days when you feel a bit low, here’s how to rustle up Jamie’s egg noodles. The ingredients serve four, and the recipe is a breeze:

Ingredients

  • 500g of fresh or frozen broccoli
  • 250g of medium egg noddles
  • 200g of mangetout (podded peas)
  • Four large eggs
  • One Chinese cabbage
  • Three tablespoons of sesame oil
  • Three tablespoons of rice wine vinegar
  • Two tablespoons of low-salt soy sauce
  • Piece of ginger (five centimetres)
  • One clove of garlic
  • Salt and pepper
  • Olive oil
  • Hot chilli sauce (to serve)

To start, get your veggies ready. Grate peeled ginger and garlic into a big bowl, then throw in soy sauce, vinegar, sesame oil, and a dash of black pepper to concoct the dressing, reports the Express.

Slice the cabbage and put it into a pot of salted boiling water. Toss in the broccoli and noodles, letting them simmer for two minutes.

Lastly, add mangetout (also known as podded peas) for another minute, making sure the total cooking time doesn’t exceed three minutes.

Once everything is cooked in the pan, drain the water and transfer it all into a bowl filled with dressing. Then, heat some olive oil in a frying pan and cook the eggs over medium heat until they’re done to your preference.

To dish up, split the noodles between bowls, place an egg on top of each one and give it a good drizzle of chilli sauce. Voila! Your super easy noodles are ready to be devoured.
