The thought of having cottage cheese for breakfast is not unusual, but this recipe tuned the ingredient on its head and transformed it into a warming casserole or the autumn

A ‘perfect’ breakfast recipe has been described as a real game changer, but it contains an unusual ingredient.

This dish will change your mind about the sorts of food you have for breakfast. It’s perhaps unusual to have a casserole for your first meal of the day, but foodies at the Daily Wrap insist it can be made really quickly. They describe it as ‘a warm meal to start the day’ and say it will instantly brighten your mood. The main ingredient is cottage cheese which is often eaten at breakfast time in warmer months with vegetables such as radishes, or tomatoes.

But few people realise it can turned into a hot casserole when the temperatures start to fall and mornings get colder. The dish is said to be ‘easy to prepare’ and it is also, nutritious and can be transformedor pimped-up by additional ingredients. Cottage cheese is a healthy breakfast choice and diet experts say it is great source of protein. The number of types of cottage cheese on offer at supermarkets is ever-expanding, so different sorts can be used for more variety. Classic cottage cheeses and homogenised cheeses can be used. But in this recipe it’s the classic variety which is the basis for this breakfast casserole.

Cottage Cheese Casserole

The dish provides a healthy and filling meal and because it contains few calories, it is a healthy option which doesn’t contain flour. It is something which can be eaten almost every day and because there are different varieties it fails to be boring. Many of the additional ingredients mean that it is easy to quickly change its flavour from a plainer option. The dish provides an alternative to traditional breakfasts which have more calories. It is also likely to be enjoyed by children.

Ingredients:

300g cottage cheese,

3 eggs,

60gs bell pepper,

60g mushrooms,

half a bunch of chives,

30g cheese (mozzarella or cheddar),

Optional deli meat,

Salt and pepper

The dish can also be enjoyed with you favourite spices including basil, oregano, parsley, dill, Herbes de Provence, granulated garlic, sweet or hot paprika and chili flakes

Preparation:

1. Cut the bell pepper into strips or small cubes. Cut the mushrooms as desired. Finely chop the chives.

2. Mix the cottage cheese with the eggs, chopped vegetables, spices, and grated cheese.

3. Transfer the mixture to a heatproof dish and bake in the oven preheated to 180°C for 20-25 minutes

4. Serve warm, for example, with a slice of rye bread.

The Mirror reported on another recipe which was apt for the season, but used an non-traditional cooking method. An air fryer is not usually used for making gingerbread cookies, but a recipe from Tower takes only 20 minutes plus chilling time. The delicious biscuits baked in just eight minutes and made 16 treats.
