This delicious, nutrition-packed slow cooker dish is perfect for a Sunday at home – it only takes a few simple steps to prepare and can be left in a slow cooker

This mac and cheese recipe involves simple ingredients and easy steps which will leave everyone around the dinner table satisfied.

There’s nothing like sitting down with your loved ones on a Sunday and enjoying a homecooked meal. But after a long week, bucking up the courage to spend hours cooking a feat for everyone can be a mammoth task you might rather leave. If so, it’s a great time to get out your slow cooker so all you have to do is throw in the ingredients and serve.

Nutritionist and food content creator Molly Cunnnigham has shared her ultimate Sunday dish which we leave everyone full and satisfied, while getting plenty of nutrients. Her delicious slow cooker ‘5 a day’ mac and cheese recipe will certainly impress guests.

Molly said: “I made a big slow cooker full of this today as meal prep for the rest of the week as it’s a really good way to pack in lots of veg in a yummy and comforting way in this cold weather.

“Hiding veg in meals like this is also such a good idea if you are or live with anybody who struggles to eat enough veg, you really can’t taste it but end up getting all those extra vitamins and minerals that we need in these colder months.”

Slow cooker mac and cheese recipe

Ingredients you will need:

  • One bag of frozen Mediterranean veg – Molly recommends Tesco’s version
  • Two tablespoons of cajun seasoning
  • One tablespoon of garlic granules
  • Sprinkle of mixed herbs
  • 250ml of water
  • 350 grams of macaroni
  • 700-750ml of milk
  • Two tablespoons of light mayonnaise
  • 150 grams of grated cheese – mozzarella or cheddar – and extra to sprinkle on top
  • Bacon rashers

Method

Start by adding your packet of vegetables, seasoning and water to your slow cooker. Cook on high or 1-2 hours until soft. Molly did note that you can skip this and microwave them if you want to. When the veg is soft, blend with a hand blender for a few minutes until soft.

Now, add your dry macaroni and milk and stir well, leave on high for one hour or until the pasta is soft. “Make sure to keep stirring and add more milk if needed,” Molly added.

Once the pasta is soft, stir in your grated cheese and mayo, top with some extra cheese and place under the grill until it is crispy on top.

While it was under the grill, put some bacon rashers into the air fryer (or in a pan if you do not have one). Once ready, chop the bacon up into small pieces and add on top of your cheese. You could also serve with chicken, fish or tofu.
