This easy sausage and potato casserole is the perfect recipe for anyone who wants to make a rich homemade meal during the week but doesn’t want to spend ages cooking

There’s nothing quite like a hearty sausage bake packed with potatoes and seasoned veggies for dinner, and this easy recipe is just the ticket for a midweek meal.

This one-pot wonder is a breeze to whip up – simply let the ingredients brown on the hob before popping it in the oven to roast slowly. Ideal for anyone wanting a rich homemade meal during the week without spending hours slaving over the stove.

This dish was whipped up by none other than Great British Bake Off queen Mary Berry, who shared the recipe in her Complete Cookbook. It’s quick to prep and serves six.

How to make Mary Berry’s sausage bake

Ingredients

  • 1kg of pork sausages
  • 900ml of chicken stock
  • 750g of potatoes
  • 500g of leeks
  • 90g of red lentils
  • One garlic
  • Two bay leaves
  • Two cloves
  • Salt and pepper
  • Parsley (to garnish)

  • Large heatproof casserole dish with lid

Instructions

Preheat your oven to 160C (140C fan or Gas Mark 3). Heat the oil in your casserole dish and brown the sausages until fully cooked. Then, remove the sausages from the dish and slice them into thick pieces. Layer your casserole dish with leeks, potatoes, lentils and sausages, topping the final layer with potatoes, reports the Express.

Don’t forget to season with bay leaves and cloves, adding garlic cloves to each layer as well. Pour in the chicken stock and bring to the boil. Cover with a lid and pop in the oven. Let it cook slowly for two and a half hours, checking the liquid levels every now and then.

When it’s nearly ready, take off the lid and crank up the oven temperature to 200C (180C fan or Gas Mark 6). Continue cooking for another 20 to 25 minutes until the potatoes on top are nicely browned. Once it’s done, remove from the oven and sprinkle with parsley. Your easy and delicious sausage bake is now ready to be served hot.
