TV chef Gordon Ramsay has elevated a British classic with an unusual ingredient you’ve probably never used in the kitchen. But trust us, it tastes absolutely amazing

Gordon Ramsay’s twist on a British classic is absolute ‘genius’.

The hot headed chef may be able to whip up some of the fanciest food in the world, but will anything really beat a classic chippy tea? “Fish & Chips is a really important dish to me, not only is it quintessentially British but it was part of my upbringing,” Gordon states on his website. “I’ve found a way to elevate that classic dish, dress it up and really modernize the experience. I’ve had three stars in Chelsea for over two decades, two stars in France, restaurants around the globe – but my mum is most proud of the chippy.”

While the TV cook usually follows a standard beer battered cod recipe, a resurfaced video from two years ago shows Gordon substituting larger in his fish batter for ginger beer. He says the surprising ingredient makes the batter even lighter and provides a zingy twist. In the comments section, fans said the unusual addition was ‘genius’ and hailed the star’s culinary creativity.

Gordon Ramsay’s cod and mushy peas

Ingredients (served 4)

  • 400g peas
  • 4 175g Thick cod fillets
  • 120g Plan flour
  • 100g Rice flour
  • 100g Butter
  • 170ml Ginger beer
  • 130ml Soda water
  • 1 tsp Baking powder
  • 1 tsp Sugar
  • Vegetable oil – for deep frying
  • Salt

Method – Cod fillets

  • In a large bowl, mix both flours together along with the baking powder and sugar. Then, add the soda water, ginger beer, and a generous pinch of salt.
  • Mix together but only until the batter bings and is smooth. Make sure you don’t over-mix. Cover the fish with a ‘dusting’ of plain flour then drop them into the batter and coat completely. Now,. pre-heat your deep fat fryer to 180C.
  • Once the oil is hot enough, gently place the fish in the basket and cook for eight-10 minutes until golden and crispy. Remove from the fryer and allow to drain.

Method – Mushy peas

  • Bring a pan of salted water and butter to a boil. Add the peas and bring back to the boil. Then, remove the peas from the cooking liquid and place into a food processor. If you don’t have one, you could use a stick blender instead.
  • Add the cooking liquid a little at a time while pulsing the peas until they reach the desired consistency. Have a cheeky taste and see if it needs seasoning with salt and pepper.
