If you’re looking for a creative way to use up Christmas leftovers, why not make a pigs in blankets-packed carbonara?

Leftovers can make the perfect meal in the following days after Christmas, but finding an innovative way to use them needn’t be tricky. One savvy home cook shared an indulgent recipe using any spare pigs in blankets you may have lying around.

Christina, also known as the Very Hungry Greek on TikTok, whipped up one of Italy’s most popular pasta dishes – carbonara – with a festive flair. While creating the traditional carbonara recipe, the food creator topped the delectable dish with some crispy pigs in blankets for some added smokiness and salt.

The recipe uses just six ingredients, boasting 30 grams of protein and 36 grams of fibre per portion. The carbonara also have 568 calories per portion.

Christina’s video has been viewed over 491,100 times, at the time of writing. Christmas fans couldn’t believe the foodie’s creation, with one person saying: “New Addiction Unlocked.”

Poppy simply said, “Omg wow,” while Erica agreed, “Yum.”

So if you want to whip up a quick pasta dish with some of your favourite Christmas leftovers, this is what you’ll need to do.

Pigs in Blankets Carbonara

Ingredients

  • 65g smoked pancetta
  • 100g dry spaghetti
  • 4 egg yolks
  • 2 1/2 tbsp grated Parmesan
  • Good pinch black pepper
  • 8 pigs in blankets, cooked

Method

Cook the pasta, drain and keep a tablespoon of pasta water aside. In the meantime fry the pancetta on a medium heat in a pan for a few minutes until crispy and browned.

Mix the egg yolks with two tablespoons of grated parmesan and a generous pinch of black pepper. Mix in the reserved pasta water.

Add the cooked spaghetti to the pan with the pancetta, making sure the heat is turned off. Mix in the egg yolks and parmesan mixture until fully combined.

Serve with the pigs in blankets and the remaining parmesan sprinkled over the top.
