An 89-year-old great-grandmother showcased her impressive trick for making “tortilla de patatas”.

Tortilla de patatas is a thick, fluffy potato and egg dish that can be enjoyed hot or cold, any time of day. It has been described as a versatile dish that has sustained Spanish families for generations – from humble beginnings to becoming a celebrated national dish.

In a video on TikTok that has amassed almost four million views, ‘Grandma Trini’ showed how to make the potato omelette that’s become “the crown jewel of Spanish cuisine”.

In the viral clip , the Spanish home cook explained that you’ll need two large or three to four medium waxy potatoes. They’ll need to be peeled and chopped into even chunks before putting into the pan.

You should also have an onion that’s been peeled and chopped, as well as eight eggs, 400ml of olive oil and a generous sprinkling of salt.

After sweating off the potatoes and onions in oil, you can pour in the seasoned eggs and begin cooking. Then it’s time to do the riskiest part of the process – turning the omelette over.

Grandma Trini demonstrated how she does this perfectly every time – without accidents. She throws the half-cooked egg mixture against a plate of Duralex crockery, which is common in many Spanish homes.

Then she carefully tips it back into the pan to cook on the other side – keeping the entire omelette in tact. And it’s safe to say people were impressed!
